We are excited to share our Mexico Chiapas coffee. This is a smooth, nicely balanced selection that performs exceptionally well as an espresso, pour-over, or French press. We tasted rich milk chocolate, the sweetness of graham crackers, and the buttery tartness of caramel apples.

From: Smallholder Farms, Chiapas, Mexico
About:
This coffee is sourced from small-scale producers in the southern state of Chiapas, Mexico, where mountain ranges provide the high altitudes and ideal climates necessary for quality cultivation.
Each producer follows organic practices on farms averaging just a few acres, allowing them to process the coffee using their own micro-mills. During harvest, producers follow a strict protocol:
- Selection: Selective picking focuses on fully ripened cherries.
- Cleaning: Cherries are washed and floated to remove less dense or damaged fruit.
- Maceration: The fruit is macerated in airtight containers for up to 48 hours.
- Final Processing: The cherries are depulped, fermented, washed, and gently dried before being stored for export.
