This coffee was grown on Finca El Rubí in the Huila department of Colombia. Finca El Rubí was purchased by Heiner and Johanna Lazo 25 years ago. At the time, the farm was predominantly growing coffee of the Caturra and Castillo varieties. Three years ago, Heiner and Johanna began planting coffee of the Pink Bourbon variety, a subvariety of Bourbon coffee, which is known for its depth of sweetness. Finca El Rubí now supports 7,300 Pink Bourbon trees.
This coffee is quite a treasure. It is clean, with a smooth, medium body. It offers a playful, sweet acidity which is reminiscent of red grape and kiwi. It has a sweet finish which is crisp and refreshing, like melon and vanilla.
Finca El Rubí is also part of a larger collective of growers in Colombia called Cafelumbus. This organization is managed by Catalina Vásquez, who, through her family's decades of growing experience, has had the privilege to invest in other farmers throughout the country of Colombia.
